The key to delicious Apple Cinnamon Gelato is patience and practice. I always start with my gelato base recipe and add a little cinnamon. Don't over do the cinnamon because the apple topping also has cinnamon. While the gelato base is churning in the machine, cut fresh apples (don't use canned apples). I prefer medium cut slices versus dicing the apples, but both work fine.
Making the apple topping:
- Warm sugar and a little water in a pan until caramel consistency
- Add butter and a little vanilla flavoring
- Add apple slices to the mixture and continue to cook
- Sprinkle with cinnamon
- Cook until apples are soft, but still crispy
Let the apple topping cool. When the gelato base is finish churning, scoop it out and finish with the apple topping. A delicious holiday treat!!!
